Pineapple Upside-Down Cake

Preheat your oven to 350°F (175°C).

Melt the butter and pour it into a 9-inch round cake pan, spreading it evenly over the bottom. Sprinkle the brown sugar evenly over the melted butter.

Arrange the pineapple slices on top of the brown sugar, placing cherries in the center of each pineapple slice and in any other gaps.

In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add the oil, pineapple juice, eggs, and vanilla extract. Mix until smooth.

Pour the batter over the pineapple slices and cherries in the cake pan, spreading it evenly.

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for about 10 minutes. Then, carefully invert it onto a serving plate. Serve warm or at room temperature. Enjoy!
