Hearty Old Fashioned Potato Soup

In a large pot, melt the butter over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.

Sprinkle the flour over the vegetables and stir to combine. Cook for another 2-3 minutes to cook out the raw flour taste

Gradually pour in the chicken or vegetable broth, stirring constantly to prevent lumps from forming

Add the diced potatoes to the pot. Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for about 15-20 minutes

Once the potatoes are cooked through, pour in the milk and heavy cream

Season the soup with salt and pepper to taste. Adjust the seasoning as needed
